When you click on the item to select it the Explorer.SelectionChange event
fires, that's what you need to handle. In that handler you would check to
see that the returned Selection collection only has 1 item and then you
would get the and check its Class property to make sure it was a mail item.
If it is then you can change the MailItem.BodyFormat property to
olFormatPlain.
