Generally, the only files to transfer are the *.pst files
You copy these files to eg Documents on the current system (I assume you
know how to take ownership) then within Outlook, File>Open>Data
File........browse to the pst, probably named outlook.pst and open it.
You then have options, eg copy data to the default Personal Folders set or?
